2 cups cooked, shredded chicken
1 10oz can rosarita mild enchilada sauce
1 cup shredded sharp cheese
1/2 cup minced onion
1 4oz can diced green chilies
1 teas. garlic salt
3/4 cup oil
24 corn tortillas

Directions:
Directions:
Combine first 6 ingredients in a large bowl. Mix well set aside in a small skillet heat oil. using tongs, dip tortillas in oil about 5 seconds each side. Drain on paper towels and keep warm. place 2 TLBS of chicken mixture in center of tortilla. Roll jelly roll style. Place seam side down on a cookie sheet that has been sprayed with cooking spray. Bake at 400º for 15 or until desired crispness.

I got this out a recipe book my mom gave me. Its a good way to use up extra chicken and its really quick for those nights when you have to be every where at one time.
