1 lb. pork sausage
12 clams (3 cans) or 1 lb.
1 1/2 c. cracker crumbs
1 medium onion, chopped
3 eggs, slightly beaten
1/4 t. sage
1/4 t pepper
1/8 t. cayenne (1/4 t. for a little hotter taste)
Add 3/4 t. salt if using ground pork instead of pork sausage

Mix all ingredients, spoon into 5" X 9" loaf pan, smooth surface. Bake for 45 to 60 minutes @ 375 or until internal temperature reaches 170 degrees,
drain off excess fat.

We've made this out of a variety of different fish, shrimp, fake crab, oysters, scallops, walleye, bass and catfish but always tried to have at least 1/2 of the fish to be shell fish. You will need to dice most fish down to 1/2" size.
