1 lb. ground pork sausage, browned and drained
1 c. shredded cheddar cheese (up to 1 1/2 c.)
4 large eggs
6 slices of bread, cubed
2 c. of milk
1/4 to 1/2 c. finely chopped onion
salt and pepper to taste (1/4 t. each minimum)
Optional: light sprinkle of cayenne

Stir together sausage, bread cubes and cheese. Beat eggs, milk and seasonings. Place sausage mixture in prepared casserole (9" X 13" glass cake pan works good); pour egg mixture overall. Cover and refrigerate overnight. Bake uncovered at 325 degrees for 1 1/2 hours or until done.

May add various ingredients same as omelet. Some bacon in lieu of the sausage, also green peppers, mushrooms, ham etc
