2 lb ground veal
1 egg
1/2 to 1 tsp kosher salt, to taste
ground pepper
grated rind of one lemon
1 grated shallot
olive oil
butter
1 c white wine
juice of 1 lemon
1/2 tsp capers
2-3 tsp honey, to taste

Directions:
Directions:
Combine veal, lemon rind, grated shallot, 1/4 c white wine, salt and pepper. Shape into 4 patties. Heat olive oil and butter in a skillet. Saute veal patties 4-5 minutes on each side or until no longer pink in the middle. Remove to a platter and keep warm. Pour off grease leaving 2-3 tbsp in the pan. Add about 1 cup white wine, juice of one lemon, and capers. Taste for seasoning and add honey to taste. Add patties back to pan and warm. Serve over fettuccine.
