4 skinless, boneless chicken thighs
5 cups chicken broth
1 medium onion, chopped
1 medium carrot, sliced
3/4 cup frozen peas, thawed
1/4 tsp thyme
Noodles (see note)

Directions:
Directions:
In a large pot, cover thighs with water and add 1/4 tsp salt. Cook until meat is tender. Remove meat from pot. Mix chicken broth, onion, carrot and thyme in the pot. Bring to boil over high heat. Add noodles. Reduce heat to low; simmer, uncovered, 8 minutes or until noodles are done. Stir in peas and chicken pieces. Heat to a boil and serve.

Lauren - Use whatever size noodles you like. I use about 8 oz. (half a pkg). Sometimes wide noodles other times skinny.
