Soak overnight or by quick method:
1 lb. navy beans
2 quarts water
In same liquid, bring beans to boil and simmer until tender, about 1 1/2 hours. Drain, reserving liquid.
Preheat oven to 275-300F.

Combine in 2 qt. casserole or crock pot:
cooked beans
1/2 c. molasses, 1/4 c. ketchup, 1 t. mustard, 2 t.salt, 1/4 tsp. pepper, 1 onion, chopped, bean liquid to cover. (opt. 2 slices bacon or salt pork chopped).
Bake 4-8 hours, adding liquid occasionally if necessary. Cover during first half of baking time, then uncover. Or, use crock pot on low setting.

Substitute soybeans or a combination of bean varitieties. Add 2-3 tsp. chili powder.
