1 3/4 c. brown sugar
3/4 c. oil
2 beaten eggs
1 1/2 c. buttermilk
3 t. vanilla
2 1/4 c. diced rhubarb
3 3/4 c. flour
3/4 t. salt
1 1/2 t. baking powder
1 1/2 t. baking soda
Topping:
1 1/2 t. butter
1 1/2 t. cinnamon
1 1/2 t. sugar

Directions:
Directions:
Mix brown sugar, oil, egg, buttermilk, vanilla and rhubarb together. Sift flour, salt, baking powder and baking soda together. Add to first mixture. Pour mixture in to muffin tins. Sprinkle topping over muffins. Bake at 375 degrees 20 to 25 minutes. Makes approximately 2 dozen muffins.

Topping: mix butter cinnamon and sugar together
