1 -1 1/2 lbs shredded ( hash brown ) potatoes
1/4 butter, melted

2 C diced ham, Canadian bacon or cooked sausage
1 C shredded cheddar cheese
1 C shredded Swiss cheese

10 eggs, beaten
1 1/2 C milk
1 tsp Lawry's seasoned salt(or seasoning of choice)
freshly ground pepper, to taste

Directions:

Pour melted butter over top of potatoes, bake 350º for 15 minutes in 9" x 13" pan. Potatoes will not be browned.
Layer meat and cheese over potatoes. Pour egg mixture over top. Sprinkle with a little extra cheese. Bake at 350º for 45 -50 minutes until eggs are set and beginning to brown.(insert a knife and it should come out clean) Let sit 10 minutes before serving.

I get this ready on Christmas Eve. I brown the potatoes, put the meat and cheese on top. In a jar I have the egg mixture ready to go. In the am, I pour the egg mixture over the potatoes and throw in the oven without a lot of fuss. We also have sticky buns with this! I prepare those the night before as well.
