2 # veal cutlets
1 oz olive oil
1/2 cup flour
1 cup sliced fresh mushrooms
1/2 cup chablis wine
1 qt brown gravy
1 tbsp kitchen bouquet
1/4 cup capers

Directions:
Directions:
Veal cutlets sliced thin, then dredge in flour and Place in hot skillet with oil. Brown lightly on each side. Place in baking dish in one slice after another, add mushrooms and capers on top .
Mix wine and kitchen bouquet into gravy. Pour over veal and cover with aluminum foil and bake at 350* about 45 min until bubbly and slightly browned. Serve over hot noodles.
