1/2 # Bulk Sausage
1/2 Cup Chopped Onion
1/4 Tsp. Thyme
2 Apples Pared, cored and cut into 1/2 inch cubes.
1 Tbsp. Lemon Juice
1 Tbsp. Sugar
1/2 Cup 2 oz. Shredded Cheddar Cheese
4 Eggs
2 Cups Heavy Cream
Pastry for Single Crust Pie

Directions:
Directions:
In large skillet cook sausage, onion and thyme until sausage is browned and onion is tender, about 10 minutes. Remove from heat; drain off excess fat. In bowl toss apples with lemon juice and sugar. Add prepared sausage mixture, Cheddar Cheese, eggs and cream; mix well. Line a 9 inch quiche dish or pie plate with pastry. turn apple mixture into dish. Bake @ 350 degree oven 40-45 minutes or until custard is set. Let stand 10 minutes before cutting to serve.
