3 # choice beef roll roast (filet)
2 cups red vinegar
2 cups reg vinegar
2 cups water
1/2 cup sugar
1/4 cup pickling spice

Directions:
Directions:
In a covered pan (roaster) place beef and mix all ingredients together and pour over beef and refrigerate in brine for 7 to 10 days. Remove and throw brine away and bake in 350* oven for about 2 hours. Make a brown gravy and add 1/2 cup
chablis just before serving. Delicious served with browned potatoes and pickled red cabbage.
