1 tsp sesame oil
1 cup onions, chopped
1 large green pepper, seeded and finely chopped
2 cloves garlic, minced
4 cups chicken broth
16 oz can crushed tomatoes
½ tsp red pepper flakes
1 tbsp curry powder
1/8 tsp pepper
1 cup diced cooked chicken
¼ cup uncooked brown rice
¼ cup smooth peanut butter

Directions:

Heat sesame oil over medium heat. Saute onions, green peppers and garlic until onions begin to brown. Stir in the rest of ingredients (except peanut butter). Simmer over low heat for 30 minutes or until rice is tender. Whisk in peanut butter until soup is completely smooth. Heat through.
