4 cups apples, peeled and chopped
2 cups sugar
1/2 cup canola oil
2 tsp. cinnamon
1 tsp. salt
2 eggs, beaten
1 tsp. vanilla extract
1 cup chopped nuts or 1/2 cup nuts and 1/2 cup raisins
2 cups flour
1 tsp. baking soda

Preheat oven to 350 degrees. Combine all ingredients and mix well. Pour into a greased 9-inch x 12-inch pan. Bake for 1 hour.
