2 C all-purpose flour
2/3 C cocoa
1 1/4 tsp baking soda
1/4 tsp baking powder
1 tsp salt
2/3 C butter =1 1/3 sticks
1 2/3 C sugar
3 large eggs
1/2 tsp vanilla extract
1 1/3 C water
Carmel Icing
4 C sugar
1 C milk
1 stick butter = 1/2 C.
1/8 tsp baking soda
1 tsp vanilla extract

Preheat oven 350 º F grease & lightly flour 2 cake pans (9-in.)
Sift together flour, cocoa, baking soda & powder, and salt then set aside. Use electric mixer, cream butter & sugar until fluffy, about 5-min. Add eggs and vanilla & beat on high speed for 3-min. Add flour mixture alternately with water, beginning & ending with flour.
Divide batter evenly between pans & bake for 30-35 min. Turn layers out onto racks that have been sprayed with cooking spray.
Carmel Icing:
Mix 3 cups of sugar & milk in heavy 3-qt. saucepan. Slowly bring to boil & keep hot. Carmelized remaining 1 cup sugar in an iron skillet by cooking over medium-high heat & stirring & scraping pan w/a spatula edge; as sugar melts. Cook until syrup turns to dark brown in color (320º
on candy thermometer). Do not scorch syrup. Stream syrup into boiling sugar & milk mixture & Cook to soft-ball stage (syrup forms a ball when dropped into cool water but is still soft), about 238º F. Add butter, baking soda, & vanilla.
Pour mixture hot into metal bowl of electric mixer & beat as it cools, until icing is creamy, 15-20 min. Spread on cake layers while icing is warm. If it gets too stiff, add a few drops of hot water.
