8 large egg yolks
2 cups sugar
1 cup fresh lemon juice
2 sticks, unsalted butter; cut into pieces
2 T lemon zest

Directions:
Directions:
1. Combine egg yolks, sugar, and lemon juice in a heavy saucepan. Cook over low heat, stirring constantly with a wooden spoon for 15-20 minutes, until thick like jam.
2. Remove from heat and stir in butter pieces, one at a time letting each melt before adding the next one. Strain through a fine mesh sieve, stir in lemon zest and transfer to a glass bowl. Cover with plastic wrap pressing against surface. Refrigerate until ready to use.
