2 bags of Romaine lettuce
2 small cans mandarin oranges or 1 large can
1 c. cashews ( I use cashew halves)
Optional : dried cranberries or pomegranate
Dressing:
3/4 c. canola oil
3/4 c. white vinegar
1 1/4 c. sugar

Directions:
Directions:
Toss romaine and cashews together, add cranberries or pomegranate. (I use pomegranate) Blend dressing and add to salad.

This dressing makes a lot, it could easily cover 4 bags of lettuce so you may want to pour only 1/2 c. on first, then add more as needed. When I make the dressing, it covers a double recipe of the salad mix above. It does keep well in the refrigerator for another salad later on.
