1 med. size eggplant
1 cup cracker crumbs
6 slices bacon fried crisp and diced
1 T. butter
1/4 cup minced onion
1/2 tsp. celery salt
salt and pepper to taste
1 egg beaten
2 cups milk
2 slices of American cheese
paprika

Directions:
Directions:
Peel eggplant, cube and cook in boiling salted water until tender, about 15 min. Drain. Add half of cracker crumbs, crisp bacon, butter, onion and celery salt to eggplant. Season to taste with salt and pepper. Place mixture in well greased casserole, about (9 by 9 by 2) and top with remaining cracker crumbs. Combine egg and milk together and pour over contents. Arrange cheese on top and sprinkle with paprika. Bake at 350 for 30 min. or until golden brown on top.
