Egg Yolk Pastry:
5 cups flour
4 tsp. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1 1/2 cup lard
2 egg yolks
cold water
Pie Filling:
5 lbs,. apples, pared, cored, and sliced
4 tsp. lemon juice
3/4 cup sugar
3/4 cup brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg

Directions:
For pastry, combine dry ingredients and cut in lard. Stir in egg yolks until smooth. Stir in enough cold water for a scant cup. Sprinkle over dry ingredients and toss with fork to make a soft dough. Roll out 1/2 pastry and line 10 x 15 jelly roll pan. Sprinkle lemon juice on apples. Place 1/2 of apples in pan. Sprinkle with 1/2 of the sugar and spice mix. Spread remaining apples and sprinkle with remaining sugar mix. Top with the other pastry, brush top with milk and sprinkle with sugar, and bake at 400º for 50 minutes. When cool, drizzle with 1 cup powdered sugar mixed with 2 T. milk.
