1/4 c. pine nuts
2 or 3 garlic cloves, peeled
4 c. packed fresh basil leaves
1/2 to 3/4 c. extra virgin olive oil
1/2 to 3/4 c. freshly grated Parmesan cheese

Directions:
Directions:
Wash the stripped basil leaves by immersing in a large bowl of water. In a food processor, chop the pine nuts quickly, then add the garlic cloves. (A clove is one segment off of a garlic "head"). Process until barely mixed, then add half of the basil leaves, processing to a coarse chop. Add the rest of the basil and chop again briefly. With the machine running, add the oil slowly, then the cheese. This will result in a thick, creamy paste. Makes about 3 cups.
Sound too complicated? Smash all the basil in the processor. On top throw the garlic, nuts & cheese. Put on the lid, turn on, and drizzle in the oil while processor runs. Voila! Pesto!
