4 lb pork roast
2 tsp crushed red pepper
2 tsp sea salt
2 tsp cumin
2 tsp paprika
2 clove garlic, minced
1 1/2 C brown sugar
1 small can tomato sauce
1 can Dr. Pepper (not diet)

Directions:
Directions:
Rub pork roast with red pepper, salt cumin, and paprika. Put in crock pot, Add remaining ingredients and cook 8 hours on low. Shred meat and return to crock pot. For extra tender pork , it can be cooked all night, shredded, returned to crock pot and cooked the rest of the day.
Serve with Cafe Rio rice and dressing in burritos, salads, tacos.

To help lower fat; When taking the meat out to shred it, pour the cooled juices into a gallon size Ziploc bag. Allow the juice and fat to separate. Once separated, cut a small hole in the bag while holding it over the crock pot, allowing the fat and juices to separate. Drain the juices until the fat reaches the bottom of the bag. At that point throw the bag away.
