1 1/4 c boiling water
1 c. Quick Cooking Oats
1 stick oleo
1 c. sugar
1 c. light brown sugar
2 eggs
1 1/3 c. flour
1 tsp cinnamon
1 tsp baking soda
1 tsp vanilla

Directions:
Directions:
Pour boiling water over Quick cooking oats. Let stand 20 minutes.Cream together the oleo,sugars and eggs. Add oats to creamed ingredients.
Sift together the dry ingredients, add to cream mixture, then stir in the vanilla.Bake at 350º for 30 minutes.


Topping:
3 Tbls oleo
2/3 c. sugar
3-4 Tbsp canned milk
2 egg yolks (mixed with milk)
1 c. coconut
1 c. chopped pecans
Mix the canned milk and the egg yolks together first and add to sauce pan with the sugar and oleo. Heat and stir to dissolve sugar. Remove from heat and add 1 c. coconut and 1 c. chopped pecans. Add to top of cake and return to oven for 10 minutes.

This was in mom's handwriting from her recipe box. This was also my favorite! (it and the Pineapple cake were both wonderful) ...I would ask her to make it for my birthday.
