2 pork chops cut into bite-sized pieces (boneless is easiest)
2 tbsp. chopped garlic
2 cans chicken broth (approximately 28 oz.)
1 can Rotel brand diced tomatoes and green chilies
1 cup water
2 tbsp. flour
salt and pepper to taste
1 tbsp. olive oil (enough to coat pan)

In a frying pan, saute garlic in olive oil. Add pork, and salt and pepper. Brown pork. Drain excess oil on to paper towels. Mix water with flour until flour has dissolved. In an appropriate-sized saucepan, combine chicken broth, Rotel©, and browned pork. Add flour/water mixture. Bring to a boil and simmer for 1-2 hours or until pork is tender.
Serve over your favorite stuffed burrito. Also great over breakfast burritos.
