4 large egg whites
1 cup sugar
pinch of cream of tartar
1/2 tsp vanilla

Directions:
Directions:
In a stainless steal mixing bowl combine egg whites, sugar and cream of tartar and place over simmering water until warm and sugar has dissolve, whisking continuously. Transfer to the mixer and beat with the whisk attachment until stiff approx 10 min. Form them into shapes on a silpat or parchment paper on a cookie sheet. Bake until dry. There are 2 different ways to do this, at a low temp for an extended time or 350º for 20 minutes
