2/3 cup fine Soda Cracker crumbs (approx. 17 crackers)
½ cup Brown Sugar
1 tsp. Soda
¾ cup sifted Flour
½ cup Shredded Coconut, cut-up
1/3 cup melted Butter or Margarine

Lemon Pie Filling (Jello brand)
2 Eggs
1 Tbsp. Lemon Juice

2 Tbsp. Sugar
Cream of Tarter

Directions:

Mix ingredients together and set aside 1/3 of mixture. Press the rest into a pie plate. Cook one package of Jello brand cooked-style Lemon Pie Filling (pie filling usually calls for 2 eggs- separate eggs and save the whites for meringue) and Lemon Juice. Pour into pie plate.

Beat egg whites with Sugar and a dash of Cream of Tarter. When stiff put on pie filling and sprinkle with the remaining crumb mixture. Bake at 350 degrees for 15 minutes or until meringue is golden brown.
