"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

1. In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic, and olive oil.

5. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork.
6. Remove fillets to a serving platter and keep warm.
7. Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistency.
8. Spoon glaze over fish, and serve immediately.
