1 seedless cucumber, sliced
1/2 small onion, thinly sliced
2 c vine ripened tomatoes, cut into quarters
1/4 c olive oil and vinegar dressing
1/2 tsp lemon zest
1 T lemon juice
Salt and pepper to taste

Stir together cucumber, onion, and tomatoes. Add dressing, lemon zest, and lemon juice. Salt and pepper to taste. Toss to coat.
