1 cup smooth peanut butter
1 cup hot water
1/2 cup soy sauce
4 Tbsp. red wine vinegar
4 Tbsp. oriental sesame oil
4 tsp. sugar
4 garlic cloves, crushed
1 to 2 tsp. crushed hot red pepper flakes, to taste
1-1/2 lb. chicken breast, cut into cubes
1 lb. linguine (or fettucini)
2 bunches broccoli, cut into 1-inch florets
3/4 cup chopped scallions
1/3 cup grated carrots
1 can sliced water chestnuts, drained
1 cup bean sprouts

Directions:
Directions:
Boil broccoli florets until bright green and crisp-tender. Drain well.
Combine peanut butter and water in a blender or food processor; mix until smooth. Add soy sauce, vinegar, sesame oil, sugar, garlic and red pepper; blend.
Stir-fry the chicken cubes until cooked.
In a large pot of boiling salted water, cook pasta to "al dente." Drain and rinse.
Put the pasta back in the pot and then add chicken, sauce and the remaining vegetable ingredients. Gently stir over a low burner until it is hot enough to serve.
