4 sticks celery- diced fine
1 lg onion- diced fine
1 sm jar pimento- diced
4 lg carrots- shredded
1 stk butter
16 oz cheese whiz
2 quarts chicken broth
1/2 # cheddar cheese grated
1 quart half and half milk

Directions:
Directions:
Saute celery & onion in oil until browned lightly.
In large saucepan add 2 quarts chicken broth,
shredded carrots and cooked celery and onion.
cook for 20 minutes until carrot is tender, add
butter, cheeses and pimento. Turn temperature
on low and stir constantly until cheese is dissolved. Turn temperature off and stir in half
and half. Place in individual serving bowls and
sprinkle lightly with parsley flakes. Serve hot.
