5 cups loosely packed mesclun or mixed baby greens
1 cup goat cheese
½ cup sun-dried tomatoes
4 spears cooked pencil asparagus


Balsamic Vinaigrette:
3 tablespoons balsamic vinegar
1 cup olive oil
1 tablespoon finely chopped shallot
1 tablespoon finely chopped garlic
1 pinch fresh ground pepper
1 pinch salt
1 tablespoon chopped fresh basil

Directions:
Directions:
For balsamic vinaigrette: In a bowl whisk together the vinegar, shallot, garlic and salt. While whisking slowly add the olive oil while the dressing thickens. Add ground pepper to taste. For salad: Toss greens with balsamic vinaigrette until lightly coated and top with sun-dried tomatoes, goat cheese and asparagus spears.
