Ingredients: 1 envelope of Goya's asafron 1 tbsp of olive oil 1 spanish onion ( chopped fine) 1/2 cup of green peppers chopped fines 2 cups of white rice 1 can of hunt's tomato sauce 1 package of chicken legs 1 package of chicken thighs 4 cups of water 2 garlic cloves 1/2 cup of peas adobo goya 1 jar of red roasted pepper

Directions:Wash chicken and trim excess fat off thighs and legs. Season chicken with adobo goya and set aside. Finely chop the onion and green pepper and fry in a large pot with the olive oil. Add some adobo goya and garlic. When onions are translucent and the pepper softened add the chicken and sear the same. Add the water, asafron packet and tomato sauce under medium heat and bring to a boil (add a lid to the pot) for about 20 minutes. Add the rice and cook for another 20 minutes (when adding rice make sure rice is covered completely with the liquid). Cook peas separately and add to rice when the rice is finished cooking. Top with sliced red roasted peppers and blend with the rice. Serve warm. |
