Portobello mushrooms
onions
roasted red peppers
goat cheese
Balsamic vinegar

Directions:
Directions:
Marinate Portobella mushrooms in Balsamic vinegar. Dice all vegetables and put in a lightly oiled saute pan. Cook for 1-2 minutes. Add whisked eggs. Cook until eggs start to set. Add goat cheese. Cook until eggs are firm. Serve with side of fruit salad and toasted rustic Italian bread.
