6 Manchester Farms marindaded quail
Paula Dean's house seasoning
1/2 stick melted butter (divided)
3/4 c chicken broth

FOR RICE:
1 c rice
2 1/2 c chicken broth
2 T diced onion
3 Chicken Bouillon Cubes
1 t salad herbs

Directions:
FOR QUAIL: Season quail with Paula Deans house seasoning. Put 2 T butter in bottom of pan, Place quail skin side up in pan. Baste with remaining butter. Bake at 400º for 25 minutes (Brown skin under broiler if necessary.) Put 3/4 c chicken broth in pan, cover with foil and bake at 325º for 1 to 1 1/2 hours.
FOR RICE:
Saute onion in 2 T butter then add 2 1/2 c chicken broth, bouillon cubes, salad herbs, 1 c rice. Cook til done (add more broth if needed to keep moist)
