2 c. sugar
1/2 tsp. salt
6 T. all-purpose flour
2 c. half & half
4 egg yolks
juice & grated zest of 2 lemons
4 egg whites, stiffly beaten

Directions:
Directions:
Preheat oven to 350º. Butter an 8"x2" square pan.

Combine sugar, salt, & flour in a bowl, stirring well until all traces of flour have disappeared. Slowly stir in half & half; add egg yolks, lemon juice, & zest. Gently fold in egg whites. Pour into prepared pan. Set this pan inside a larger pan containing warm water 1" deep (this is baking in a water bath to prevent scorching.). Bake for 30-35 minutes or until golden brown.

This wonderful pudding will have a cake-like top with a rich, mouthwatering sauce on the bottom. Serve warm or cold.
