1 small zucchini, shredded
1 pouch cornbread mix
1 large egg
1/2 C. milk
3 T. oil

Directions:
Directions:
Microwave shredded zucchini for 2 minutes on medium-high; drain. Combine zucchini with cornbread mix, egg and milk. Let stand for 5 minutes. Heat oil in pan; drop heaping T. batter into hot oil. Cook 1 1/2 to 2 minutes on each side.
