3 c. all purpose flour
1/4 tsp. yeast
1 3/4 tsp. salt
1 1/2 c. water

In a large bowl combine all ingredients together until blended (the dough will be sticky and shaggy looking). Cover with tin foil or wrap and let sit overnight; 12-18 hours until bubbly. Place dough on a lightly floured surface and sprinkle with a little more flour. Fold dough under itself until it is semi smooth dough ball. Lit sit 1-2 hours. In the meantime pre-heat oven to 450º. Place a cast iron Dutch oven in the oven for 20 min. so it is nice and hot,. Take Dutch oven out and lift dough into hot pan (can slit the top if desired). Place lid on and bake for 30 min.. Remove lid and bake 15-30 min. more until browned. Let cool for 10 min. in pan and then remove to a wire rack.

You can add; 1/12 tsp. cinnamon and raisins, Montreal steak seasoning, garlic, sundried tomato, dill, etc.
