Ingredients:  
1 lb Italian Sausage cut into 2” links
2 Potatoes baking size
1 onion 3” diameter
2 Bell Peppers Green and Red
1 Can Stewed Tomatoes
Salt and Pepper to taste
2 Qt Casserole dish
2 Tbs. Olive Oil

Directions:
Directions:
1) Peel potatoes, cut into bite size, place in casserole dish.
2) Cut Onion coarsely and place in casserole dish.
3) Cut peppers julienne place in casserole dish.
4) Put two tablespoons of olive oil into casserole dish with salt and pepper and toss.
5) Place sausage links on top.
6) Drain stewed tomatoes and place tomatoes on top of sausage.
7) Bake 1 hour covered at 400 degrees.
8) At ½ hour turn over sausage continue baking till done.
