2 c. softened butter
2 c. sugar
3 eggs
2 tsp vanilla extract
1 tsp lemon extract
6 c. all-purpose flour
1 tsp baking soda

Cut 4 12x14 pieces of waxed paper. Set aside. In a large bowl cream butter & sugar, beat in eggs, vanilla & lemon extract until light & fluffy. In a large bowl combine flour & soda. Gradually stir in flour mixture into egg mixture until blended. Divide into 4 parts. Shape each into 8-10" roll. Place in freezer container (in wax paper). Use within 6 months. Makes 4 rolls or about 12 dozen cookies.

To bake, preheat oven to 350. Lightly grease 2 large baking sheets. Cut dough into 1/4" slices. Place on sheets 1/2" apart. Sprinkle lightly with sugar. Bake 8-10 minutes, until edges start to turn brown. Remove from sheet. Cool on wire racks. Makes about 36 cookies, each roll.
