3 eggs
2/3 C oil
1 1/2 C granulated sugar
1 tsp vanilla
2 Cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 Tbsp cinnamon
1 C chopped nuts (optional)
2 C grated Zucchini drained well

Directions:
Directions:
Mix eggs, oil, sugar and vanilla well. Sift dry ingredients together and add to liquids, blending well. Add nuts and drained Zucchini. Mix again, pout into 9X5X3 greased and floured pan. Bake 1 hour at 325º.
