"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
Green tomato slices, cut to suit yourself
Wide mouth jars, enough for tomatoes
Cold Packer

Directions:
Directions:
Slice tomatoes as thick or thin as you like. You will need as many wide mouth jars as necessary to accommodate the number of tomatoes. Fill jar with tomatoes and water. If you use cold water in your jars, then use cold water in your cold packer. If you use hot water in your jars, then use hot water in your cold packer. After you get your tomatoes and water in your jars, put lids on and tighten. Put jars in cold packer and fill to the top of the jars. When water comes to a boil--Boil for 10 minutes and remove from heat. Let cool. Can be canned without salt. I dip these slices in corn meal and fry to suit.

Personal Notes:
Personal Notes:
The greener they are the better, hard and green. With a little planning and canning you could make this a year round treat.
