1 lb. large mushrooms
3 tbsp. olive oil
1 small onion
1 slice chopped bacon
salt and pepper
1/2 c. bread crumbs
2 tbsp. grated cheese
1 tbsp. chopped parsley
1/2 c. chopped tomatoes
1 egg

Directions:
Directions:
Wash mushrooms and remove stems. Chop stems in small pieces. Brown the onion, bacon and mushroom stems in olive oil to a golden brown. Add the bread crumbs, cheese, parsley and seasonings and cook for five minutes. Remove from heat. add eggs and tomatoes and mix well.
Fill the mushroom caps with the stuffing. Arrange flat on baking sheet. Drizzle a little olive oil over mushrooms. Bake for 30 minutes at 375 degrees.
