1 1/2 pounds beef stew meat
1 Tbsp vegetable oil
2 C sliced fresh mushrooms
1/4 C sliced green onions (4)
2 cloves garlic, minced
1/2 Tsp dried oregano, crushed
1/2 Tsp salt
1/4 Tsp dried thyme, crushed
1/4 Tsp ground black pepper
1 bay leaf
1 1/2 C reduced - sodium beef broth
1/3 C dry sherry
1 8 oz light sour cream
1/4 C cold water
2 Tbsp cornstarch
snipped fresh parsley

Directions:
Trim fat from meat. Cut meat into 1 inch pieces. In a large skillet heat oil over medium heat. Cook meat, 1/2 at a time, in hot oil till brown. Drain off fat and set aside. In a 4 quart slow cooker combine mushrooms, green onions, garlic, oregano, salt, thyme, pepper, and bay leaf. Top with meat. Pour broth and sherry over mixture in cooker. Cover and cook on low heat settling for 8-10 hours or on high heat setting for 4- 5 hours. Remove Bay leaf and discard. If using low heat settling turn to high setting. In a medium bowl combine sour cream, the cold water,and corn starch. Stir about 1 cup of the hot cooking liquid into the sour cream mixture. Stir sour cream mixture into the cooker. Cover and cook for about 30 min more or until thickened. If desired, sprinkle each serving with parsley.
