1 -16 oz. box Elbow Macaroni
1 Lg. Tomato, diced very small
1 Green Pepper, chopped very small
Approximately 1 ½ Cups Mayo
1 tsp. Oil
½ tsp. Vinegar

Directions:
Directions:
Cook macaroni according to pkg. directions; drain and rinse in cold water.
Mix oil, vinegar and mayo. (I never measure these, just three or four large spoons of mayo, and then I add about a half of a cap oil, tiny bit of vinegar, mix it all up and keep adding oil and vinegar to taste!) The objective is to have the dressing so it does not taste so much like mayo!!

You can add thinly sliced radishes, chopped carrots and salad shrimp.
With this variation and with lots of my pasta salads, I add a couple of teaspoons of horseradish sauce. This also cuts the strong mayo taste.
