8 oz. Kielbasa, sliced into 1/2" rounds.
2 Tbsp. Olive Oil
2 cups Onion, chopped
1 cup Celery, chopped
1 cup Red Pepper, chopped
1 lb. medium shrimp, peeled and deveined
1 tsp. garlic, minced
4 cups Tomatoes, chopped (may use 2 -14 oz. cans of diced tomatoes
2 tsp. Tabasco, or to taste
Salt and pepper to taste
Chopped scallions

Directions:
Directions:
Brown kielbasa in oil, over medium-high heat for about 3 minutes. Stir in onions, celery and bell pepper; saute five minutes. Add shrimp and garlic, cook for 3 minutes more, stirring constantly.
Stir in tomatoes and rice, cook 3 -4 minutes to heat through.. Season with Tabasco, salt and pepper. Garnish with chopped scallions and serve.

Personal Notes:
I usually just serve this over hot rice, instead of mixing it together. However, it is great for leftover rice, to mix it in and heat it up.Substitute large pieces of rotisserie chicken for the shrimp.
