CHICKEN WINGS WITH THAI SWEET AND HOT CHILI GLAZE

1/4 cup sweet chilli sauce
2 tablespoons soy sauce
1 tablespoon hot chili-garlic sauce
2 teaspoons dark sesame oil
1 teaspoon grated fresh ginger
12 chicken wing pieces, (drums and flats) wing tips removed
vegetable oil
kosher salt
fresh ground black pepper
1-2 tablespoons of chopped celantro, (optional)

Make the glaze in a small bowl by whisking the sweet chilli, soy and garlic/chilli sauces together with the sesame oil, celantro (optional), and ginger.

Put in sauce pan and simmer to reduce by 1/4 or until it reaches the consistancy of warm jam.

Pat wing pieces with paper towel and brush with olive oil and season with kosher salt and pepper on all sides.

Grill the chicken wings over direct heat until the skin begins to crisp, about 10-15 minutes,(your grill will be different), turning occasionally.

When done, dump wing pieces into bowl with reduced sauce and stir until completely coated.
Serve as is or with a dash of Sriracha chili sauce for an extra kick.

Use this on all kinds of chicken. For an extra kick. Dip chicken in Sriracha Hot Chili sauce instead of blue cheese dressing, then hold on!
