1 medium onion ( chopped )
2 shallots ( chopped )
1 carrot ( chopped )
1 lg butternut squash
1/2 lb corn
2 tbs butter
2 tbs flour
2 tbs extra virgin olive oil
salt
12 cups of water

Directions:
Directions:
1) Saute onion, shallots, carrot, corn and butternut with olive oil until brown.
2) Add butter and flour, mix and then add the water and salt.
3) Keep mixing until smooth on low fire.
4) Cook until soft, strain the vegetables and puree vegetables in a food processor.
5) Add to liquid, add some salt if necessary
