2 Sticks of Margarine
2 Cups of Sugar
2 Cups of Flour
1 Tablespoon Fresh Lemon Juice
1 Teaspoon Vanilla Extract
5 Eggs

Directions:
Directions:
Preheat oven to 350º
Grease and flour a bundt pan.
Cream margarine and sugar.
Stir in flour just enough to blend.
Add lemon juice and vanilla and stir well.
Add eggs one at a time, mixing well after each one.
Pour batter into pan. Bake for a total of 1 hour and 15 minutes. After the cake turns a golden brown (after 30-45 minutes) cover pan with foil and finish baking.
Cook cake and then invert onto a plate.

This cake can also be made dairy by substituting butter for the margarine.
You can also add different extracts to change the flavor of this cake or even add coconut.
