Broth:
2 Chicken breasts
1 whole onion
3 carrots
celery(top half)
4 chicken cubes
Meatballs:
1 lb. hamburg
1/2 cup parmesan cheese
1/2 cup breadcrumbs
2 eggs
1 clove of garlic
after:
whole head escarole,torn into pieces
3-4 eggs
1 cup parmesan cheese

Directions:
Directions:
For the broth, combine the broth ingredients and cook 45 minutes. Cool. Debone. Throw out the veggies. Dice the meat and return to the broth.
Then make the meatballs. Make them small. Simmer them in the broth. Take the whole head of escarole tear into pieces. Put in the broth.
Take 3-4 eggs and a cup of parmesan cheese. Pour the mixture into soup and cover. Don't stir and let set for 15 minutes.
