2 LBS Chicken-cut into serving sizes
1/2 teaspoon salt(opt)
1/4 tsp black pepper
1/2 Cup all purpose flour
1/2 Cup veggie oil (for pan frying)
1 lg yellow onion-diced
4 tablespoonful water
1/2 tsp ground white pepper
1/2 tsp seasoned salt (opt)
4 Cups low fat, low sodium chix broth

Directions:
Directions:
Remove all visible fat from chicken. Rinse chicken with warm water and blot dry with paper towel. On waxed paper season chicken with salt and black pepper. Dredge chicken in 1/4 Cup of flour. In large(12 in.) skillet,heat oil over med/high heat. Add chicken and cook turning frequently, until browned on all sides, about 10 minutes. Remove chicken from skillet. Heat oven to 350º. Pour off and discard all but 2 tbls drippings from skillet. Add onions, stirring occasionally, about 5 minutes. Stir in remaining flour and cook 2-3 minutes. Add water,white pepper,seasoned salt and chicken broth, stirring until flour is well mixed. In large baking dish place chicken in a single layer. Pour gravy over. Cover with foil lightly. Bake until chicken cooked through, about 20 minutes.
