1/2 c. sweet onions, chopped
1 sm. potato, peeled and diced
1 or 2 T. butter
1 14.5-oz. can chicken broth
4 c. broccoli crowns, chopped
1 c. cheddar cheese, shredded
2 c. half and half
salt and pepper to taste

Directions:
Directions:
In a large pot, saute onions and potatoes in butter until tender. Add chicken broth and bring to a boil. Add broccoli, salt, pepper and cook until well done. Cool slightly. Transfer to a blender and blend until smooth. Return broccoli mixture to pot, stir in cheese and heat until cheese has melted. Add half and half, heat but do not boil. Asparagus can be substitued for broccoli.
