First, catch a really nice fish - walleye fillets, pan fish, or fish of your choice. De-bone and cut into fillets. (Or purchase your favorite white fish).

Flour
1 egg
1 C. milk
Ritz crackers or Cheez-It type crackers

Directions:
Directions:
Roll fish fillets in flour. Shake off excess flour. Dip in batter made of 1 beaten egg and 1 cup milk (Double if you need more liquid), Roll in crushed crackers (whichever type you choose) to fully coat fillets.

Deep fry at 350º for approximately two minutes.
